Northwood Cemetery. BRODT SAVINO HAMILTON JOHN Feb. 9, 2003, age 82 years, of the idea of "central packaging," his son said. His butcher shops would cut, package and deliver meat to other markets around the city. In 1972, he sold the four meat markets and ventured into Center City to open one of the first gourmet meat and cheese specialty shops there, on 19th Street just off Rittenhouse Squar e.

Then he opened the cheesery s. "My father had the entrepreneurial spirit, he was a risk-taker," Matthew Pagano said. But more than that, he loved people and he loved his work. "He just loved food. He would break out and start singing songs about asparagus," his son said.

"He had a great sense of humor." Pagano also was known for treating the little old lady who bought a cookie and the person who ordered $100 worth of food for their office equally well. He also reached out to the kids from Ben Franklin High School in the early 1980s, taking some 14-year-old students in to train them. "Three are still with us," Matthew said. He also is survived by his wife, Rosemarie two other sons, John and Andrew; four daughters, Elaine, Jacqueline, Lucia and Cynthia; brothers Anthony, Vincent, Joseph and Cosmo, and eight grandchildr en. Services: A Funeral Mass Saturday at 10 a.m.

For Jack Pagano, the food busi-nes was a way of life.

He had been in it since the age of 16, when he apprenticed to a butcher to help out the family. At one time or another, all of his seven children also worked in the busines s. He retired in 1994. The deli, which started out in 1988 as a gourmet foods shop at what is now the Mellon Independence Center at 8th and Market streets, was the last of a series of highly successful food ventures for Pagano. Pagano was best known for his Cheesery, which opened on Walnut Street west of Broad in 1979.

The upscale meat and cheese shop drew customer like John Dorrance of the Campbell Soup family, then-76er Charles Barkley and restaurateur George Perrier. It also spawned other Pagano Chesserys at Suburban Station, in Nar berth, and other locations. He sold the cheesery to start Pagano's gourmet shop at the Mellon location. It later changed to an eat-in deli and pizzeria, which draws much of its crowd from the nearby federal building, after supermarkets began offering specialt items, Matthew Pagano said. Jack Pagano got his start in the business as a student at North Catholic High School when he "went and learned how to cut ALICE J.
